Higashi Sonagi(Nagasaki Prefecture): Higashi Sonogi has a long history of growing tea that stretches back over 500 years. Grown in the mountains above orange, plum and mandarin trees, the signature black tea from this region is cut in late summer by Kosuke Nakayama, spreading the chopped tea out on large mats in the sunshine where the tea dries naturally to a beautiful dark brown.

Nakayama Kosuke’s family farm has been operating for 70 years in Higashi Sonogi. To preserve their land and its soil, they use only organic fertilizers that they prepare themselves. The Nakayama family works hard to build partnerships with other regional tea farmers as well as other Kyushu based industries.
PREPARATION
With medium/high levels of caffeine, this smooth, delicately sweet tea has none of the tannin mouth feel that other “mass produced” black teas have and just a little tea in a pot goes a long way. This beautiful tea is simply delicious as either a cold brew, a sun tea in the summer time, or as a hot tea for every day drinking.
Start with a teaspoon of tea leaves for an entire pot of tea or container of coldbrew. The leaves will quickly expand and a glowing copper/golden color will develop. This tea is easy to brew, able to stand up to right off the boil water or brewed cold overnight. This tea can be rebrewed 2-3 times and still maintains a rich flavor from brew to brew
